Bear's Favorite Banana Bread


So I got hit with morning sickness right around Christmas time, and since then, the last thing I have felt like doing is cooking. We've had some pretty pitiful dinners, but Andy has been a champ, pitching in to do some of the cooking and not complaining when we just eat cereal for dinner. Either because I've made it through the first trimester, or because I'm just getting used to feeling this way, I've finally felt like cooking again this week. I actually made dinner 3 times last week which I feel like is quite a feat. 

Today, I busted out the mixer for the first time since before Christmas to make this banana bread. I absolutely cannot eat bananas once they start to turn brown, so I've been saving up the brown ones to make banana bread. I think I got the itch when I read Leslie's post the other day. 


This banana bread has all the usual ingredients, but it's put together a little bit differently. It's not a bit healthy even though it does involve fruit, but I figure I get a few extra calories a day for the baby, right? Andy doesn't like pecans, and I love them but not in banana bread for some reason, so I subbed a half cup of mini chocolate chips instead of pecans. You can also leave them out all together. Get ready, because baking this bread is guaranteed to make your house smell absolutely amazing!

2 c all-purpose flour
1 1/2 tsp baking soda
1/2 tsp salt
4 overripe bananas
1 c sugar
3/4 c unsalted butter, melted and cooled
2 large eggs
1 tsp vanilla
1/2 c pecans, finely chopped (or sub mini choco chips, or leave out...however the mood strikes you)
powdered sugar for dusting (*optional)

Preheat oven to 350. Lightly grease a 9x5 in loaf pan. In a small bowl, combine flour, baking soda, and salt. Set aside.

Mash 2 bananas with a fork in another small bowl so they still have a bit of texture. With an electric mixer fitted with the whisk attachment, whip the remaining bananas and sugar together for about 3 mins. Add melted butter, eggs, and vanilla. Beat well. Mix in dry ingredients until just incorporated. Fold in nuts (or chips) and mashed bananas with a spatula. 

It was all I could do to not lick the spoon with this batter...gotta hate that no raw eggs rule during pregnancy

Pour batter into greased pan. Tap pan on counter to remove air bubbles (I forgot this part and mine turned out fine). 


Bake about 1 hour 15 mins, or until toothpick comes out clean.


Slice, dust with powdered sugar if desired, and enjoy!


On a side note, apparently Bear also enjoys banana bread. I was sitting here typing away at my blog post right after making this bread when I heard a suspicious noise in the kitchen. I walked in to find Bear chowing down on the banana bread that was sitting on the counter. He hasn't eaten anything off the counter in months! I have to say, I can't blame him though. The smell of this bread is pretty irresistible. Thankfully, he only got to a little of it and we could still salvage the rest. So, if you make this, make sure to keep it out of nose's reach for your dog =)
